Ingredients
  • 100 gram Cashews
  • 100 gram Butter
  • 100 gram Granulated sugar
  • 100 gram Brown sugar
  • 1 unit Egg
  • 1 teaspoon Vanilla extract
  • 200 gram All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 100 gram Semi-sweet chocolate chips
  • 100 gram Butterscotch chips
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, pulse the cashews until finely chopped.
  3. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture and mix until well combined.
  7. Stir in the chopped cashews, chocolate chips, and butterscotch chips.
  8. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
