Ingredients
  • 200 gram Carrots
  • 100 gram Raisins
  • 150 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 100 gram Unsalted butter
  • 150 gram Brown sugar
  • 1 unit Egg
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking pan.
  2. In a bowl, mix together the grated carrots, raisins, flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, cream together the butter and brown sugar. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Spread the batter evenly into the prepared baking pan.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cookie bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Cut into bars and serve.
