Ingredients
  • 200 gram Carrots
  • 200 gram Zucchini
  • 200 gram All-purpose flour
  • 150 gram Sugar
  • 120 ml Vegetable oil
  • 2 unit Eggs
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
Instructions
  1. Preheat the oven to 180°C (350°F). Grease a muffin tin or line with muffin liners.
  2. Grate the carrots and zucchini. Squeeze out any excess moisture.
  3. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon powder, and salt.
  4. In a separate bowl, beat the eggs. Add the vegetable oil and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients. Stir until just combined.
  6. Fold in the grated carrots and zucchini.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely.
