Ingredients
  • 500 gram Carrots
  • 200 gram Cheddar Cheese
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 cup Breadcrumbs
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Peel and grate the carrots.
  3. Finely chop the onion and garlic cloves.
  4. Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until they turn golden brown.
  5. Add the grated carrots to the pan and cook for another 5 minutes, stirring occasionally.
  6. Remove the pan from heat and let the mixture cool slightly.
  7. Grate the cheddar cheese.
  8. In a mixing bowl, combine the cooked carrot mixture, grated cheese, salt, and black pepper. Mix well.
  9. Transfer the mixture to a greased casserole dish.
  10. Sprinkle breadcrumbs evenly over the top.
  11. Bake in the preheated oven for 30-35 minutes, or until the casserole is golden and bubbly.
  12. Remove from the oven and let it rest for 10 minutes.
  13. Garnish with fresh parsley before serving.
