  • 1.5 cup Carrots
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Brown sugar
  • 0.5 cup Granulated sugar
  • 2 unit Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts
  • 0.5 cup Cream cheese
  • 0.5 cup Powdered sugar
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine the flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots and chopped walnuts.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the blondies to cool in the baking dish for 15 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth.
  11. Spread the cream cheese frosting over the cooled blondies.
  12. Cut into squares and serve.
