  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs and sugar until well combined. Add the vegetable oil and vanilla extract, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots, chopped walnuts, and raisins.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the carrot bread cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  8. Slice and serve.
