  1. Preheat the oven to 350°F (175°C). Grease and flour a baking dish.
  2. In a large bowl, combine grated carrots, flour, sugar, oil, eggs, vanilla extract, baking powder, cinnamon, and salt. Mix well.
  3. Pour the batter into the prepared baking dish and spread it evenly.
  4. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. In a separate bowl, beat cream cheese, powdered sugar, butter, and milk until smooth.
  6. Once the carrot bars have cooled, spread the cream cheese frosting over the top.
  7. Sprinkle chopped walnuts on top for garnish.
  8. Let it rest for at least 1 hour before serving.
  9. Cut into bars and enjoy!
