Carmelized Pear, Fig and Gorgonzola Pastry
Gorgonzola is a blue cheese that originated in Italy and is named after the town of Gorgonzola near Milan. It has a creamy texture and a distinctive tangy flavor that pairs well with sweet fruits like pears and figs.

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and cut it into 4 equal squares.

Place the squares on a baking sheet lined with parchment paper.

In a skillet, melt the butter over medium heat.

Add the pears and cook until caramelized, about 5 minutes.

Remove the pears from the skillet and set aside.

In the same skillet, add the figs and cook for 2-3 minutes.

Remove the figs from the skillet and set aside.

Place a spoonful of gorgonzola cheese in the center of each pastry square.

Top with caramelized pears, figs, and chopped walnuts.

Drizzle honey over the top.

Sprinkle with thyme leaves.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown.

Allow to rest for 10 minutes before serving.
