Ingredients
  • 500 gram Potatoes
  • 1 piece Onion
  • 2 cloves Garlic
  • 4 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Chives
Instructions
  1. Peel and chop the potatoes into small cubes.
  2. Finely chop the onion and garlic.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the chopped onion and garlic, sauté until translucent.
  5. Add the potato cubes and vegetable stock to the pot.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.
  7. Use a blender or immersion blender to puree the soup until smooth.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with chopped chives.
