Ingredients
  • 2 pound Potatoes
  • 4 medium Shallots
  • 2 tablespoon Olive Oil
  • 1 teaspoon Fresh Sage Leaves
  • 2 tablespoon Butter
  • 1/2 cup Milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Peel and chop the potatoes into chunks. Boil them in salted water until tender. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the shallots and cook until caramelized, stirring occasionally.
  3. In a small saucepan, melt the butter over low heat. Add the sage leaves and cook for a minute until fragrant.
  4. In a large bowl, mash the cooked potatoes. Stir in the caramelized shallots, sage-infused butter, milk, salt, and black pepper. Mix well.
  5. Serve the mashed potatoes hot, garnished with extra caramelized shallots and sage leaves if desired.
