Preheat the oven to 375°F (190°C).

Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 45 minutes, or until the squash is tender.

While the squash is roasting, cook the jumbo pasta shells according to the package instructions. Drain and set aside.

In a mixing bowl, combine the ricotta cheese, Parmesan cheese, mozzarella cheese, egg, chopped sage leaves, minced garlic, salt, and black pepper. Mix well.

Once the roasted butternut squash has cooled slightly, scoop out the flesh and add it to the cheese mixture. Stir until well combined.

Stuff each cooked pasta shell with the butternut squash and cheese mixture. Place the stuffed shells in a baking dish.

Pour marinara sauce over the stuffed shells, covering them completely.

Bake in the preheated oven for 20 minutes, or until the sauce is bubbly and the cheese is melted.
