Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter
  • 2 Eggs
  • 1/2 cup Corn syrup
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/2 cup Raisins
  • 1/2 cup Chopped pecans
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the eggs, corn syrup, vanilla extract, and salt. Stir into the flour mixture until just combined.
  4. Fold in the raisins and chopped pecans.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the tin for 10 minutes. Transfer to a wire rack to cool completely.
  8. Serve and enjoy!
