Buckeyes are named after the nuts of the Ohio buckeye tree, which resemble the chocolate-covered peanut butter balls.

  1. In a mixing bowl, combine creamy peanut butter, softened unsalted butter, vanilla extract, salt, and powdered sugar. Mix until well combined.
  2. Shape the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the refrigerator and let the buckeyes chill for about 1 hour.
  4. In a microwave-safe bowl, melt the semi-sweet chocolate chips and vegetable shortening together, stirring every 30 seconds until smooth.
  5. Remove the chilled buckeye balls from the refrigerator. Using a toothpick or fork, dip each ball into the melted chocolate, leaving a small portion uncovered to resemble a buckeye nut.
  6. Place the dipped buckeyes back on the parchment paper-lined baking sheet and let them set at room temperature until the chocolate hardens.
  7. Once the chocolate has hardened, transfer the buckeyes to an airtight container and store them in the refrigerator until ready to serve.
