Ingredients
Instructions
-
In a mixing bowl, combine creamy peanut butter, softened unsalted butter, vanilla extract, salt, and powdered sugar. Mix until well combined.
-
Shape the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
-
Place the baking sheet in the refrigerator and let the buckeyes chill for about 1 hour.
-
In a microwave-safe bowl, melt the semi-sweet chocolate chips and vegetable shortening together, stirring every 30 seconds until smooth.
-
Remove the chilled buckeye balls from the refrigerator. Using a toothpick or fork, dip each ball into the melted chocolate, leaving a small portion uncovered to resemble a buckeye nut.
-
Place the dipped buckeyes back on the parchment paper-lined baking sheet and let them set at room temperature until the chocolate hardens.
-
Once the chocolate has hardened, transfer the buckeyes to an airtight container and store them in the refrigerator until ready to serve.
