Ingredients
  • 1.5 cup Brown Rice
  • 2 cup Vegetable Broth
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Bell Pepper
  • 1 cup Frozen Corn
  • 1 can Black Beans
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 cup Shredded Cheddar Cheese
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the onion, garlic, and bell pepper until softened.
  3. Add the brown rice, vegetable broth, cumin, chili powder, salt, and black pepper to the skillet. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the frozen corn and black beans.
  5. Transfer the mixture to a casserole dish and sprinkle with shredded cheddar cheese.
  6. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for 10 minutes.
  8. Garnish with fresh cilantro before serving.
