Ingredients
  • 2 cup Broccoli
  • 1 cup Cheddar cheese
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 4 cup Vegetable broth
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Nutmeg
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the flour and cook for 1 minute, stirring constantly.
  3. Slowly pour in the vegetable broth, stirring constantly to prevent lumps.
  4. Add the broccoli and bring the mixture to a simmer. Cook for 10-15 minutes, or until the broccoli is tender.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the milk and cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through.
  7. Season with salt, black pepper, and nutmeg.
  8. Serve hot and enjoy!
