Ingredients
  • 2 cup Broccoli
  • 1 cup Cheddar Cheese
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose Flour
  • 4 cup Vegetable Stock
  • 2 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Nutmeg
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the flour and cook for 1 minute, stirring constantly.
  3. Slowly pour in the vegetable stock, stirring constantly to avoid lumps.
  4. Add the broccoli and bring the mixture to a boil. Reduce heat and simmer for 15 minutes, or until the broccoli is tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Return the soup to the pot and stir in the milk, cheddar cheese, salt, black pepper, and nutmeg. Cook over low heat until the cheese is melted and the soup is heated through.
  7. Serve hot and enjoy!
