  • 500 gram Broccoli
  • 200 gram Cheddar Cheese
  • 100 gram Onion
  • 2 clove Garlic
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose Flour
  • 4 cup Vegetable Stock
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the flour to the pot and cook for 1-2 minutes, stirring constantly.
  3. Slowly pour in the vegetable stock while whisking continuously to avoid lumps.
  4. Add the broccoli florets to the pot and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the broccoli is tender.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Return the soup to the pot and stir in the milk and grated cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through.
  7. Season with salt and black pepper to taste.
