  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 1/4 cup All-purpose flour
  • 2 cup Chicken broth
  • 1 cup Beer
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Hot sauce
  • 1 cup Milk
  • 2 cup Cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Parsley
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the chicken broth, beer, Dijon mustard, Worcestershire sauce, and hot sauce.
  4. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.
  5. Reduce the heat to low and stir in the milk, cheddar cheese, and Monterey Jack cheese until melted and smooth.
  6. Season with salt and black pepper.
  7. Remove from heat and let the soup rest for 5 minutes.
  8. Serve hot, garnished with parsley.
