Ingredients
  • 400 gram Potatoes
  • 1 cup Bell Peppers
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 large Eggs
  • 1 cup Cheddar Cheese
  • 2 tablespoon Green Onions
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown, about 10 minutes.
  3. Add bell peppers, onion, and garlic to the skillet. Cook for another 5 minutes, until the vegetables are tender.
  4. Season with salt and black pepper.
  5. Make 4 wells in the skillet and crack an egg into each well. Sprinkle cheddar cheese over the skillet.
  6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the eggs are cooked to your liking.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Garnish with green onions and fresh parsley.
  9. Serve hot and enjoy!
