Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 large Eggs
  • 1 cup Granulated sugar
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup (grated) Zucchini
  • 1 cup Blueberries
Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat together eggs, sugar, oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just blended.
  5. Fold in the grated zucchini and blueberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
