Ingredients
  • 1.5 cup All-purpose flour
  • 0.75 cup Granulated sugar
  • 0.5 cup Butter
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 cup Blueberries
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 0.5 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
  4. Press half of the dough into the bottom of the prepared baking pan.
  5. In a saucepan, combine blueberries, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let cool slightly.
  6. Spread the blueberry mixture evenly over the dough in the pan.
  7. Crumble the remaining dough over the blueberry layer.
  8. Bake in the preheated oven for 35-40 minutes, or until golden brown.
  9. Allow to cool completely in the pan before cutting into squares.
  10. Dust with powdered sugar before serving.
