Ingredients
  • 1.5 cup All-purpose flour
  • 1.5 cup Rolled oats
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 2 large Eggs
  • 1 cup Sugar
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup Milk
  • 1.5 cup Blueberries
Instructions
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs and sugar until well combined. Add the vegetable oil, vanilla extract, and milk, and mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
