  1. In a mixing bowl, combine all-purpose flour and ground almonds.
  2. In a separate bowl, cream together granulated sugar and unsalted butter until light and fluffy.
  3. Add egg yolk, vanilla extract, and lemon zest to the butter mixture and mix well.
  4. Gradually add the flour mixture to the butter mixture and mix until a dough forms.
  5. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out one portion of the dough on a lightly floured surface to a thickness of about 1/8 inch.
  8. Use a round cookie cutter to cut out cookies and transfer them to the prepared baking sheet.
  9. Repeat with the remaining dough.
  10. Using a smaller cookie cutter, cut out the centers of half of the cookies.
  11. Bake the cookies for 10-12 minutes or until lightly golden.
  12. Allow the cookies to cool completely.
  13. Spread blueberry jam on the solid cookies.
  14. Dust the cookies with the cut-out centers with powdered sugar.
  15. Place the cut-out cookies on top of the jam-covered cookies.
  16. Serve and enjoy!
