Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 Egg
  • 1 tablespoon Lemon zest
  • 2 tablespoon Fresh lemon juice
  • 2 cup Blueberries
  • 2 tablespoon Cornstarch
  • 1/2 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. Reserve 1 cup of the crumb mixture for topping. Press the remaining mixture into the prepared baking pan.
  4. In a separate bowl, beat together the egg, lemon zest, and lemon juice. Stir in the blueberries and cornstarch until well combined.
  5. Spread the blueberry mixture evenly over the crust in the baking pan.
  6. Sprinkle the reserved crumb mixture over the blueberry layer.
  7. Bake for 40 minutes, or until the top is golden brown.
  8. Allow the bars to cool in the pan for 30 minutes before cutting into squares.
  9. Dust with powdered sugar before serving.
