  • 1 cup Blueberries
  • 1 teaspoon Ginger
  • 1/2 cup Sugar
  • 4 ounce Goat Cheese
  • 8 slice Baguette
  • 8 leaves Fresh Mint Leaves
Instructions
  1. In a saucepan, combine blueberries, ginger, and sugar. Simmer for 10 minutes until thickened.
  2. Remove from heat and let it cool for 5 minutes.
  3. Meanwhile, toast the baguette slices in a toaster or oven until golden brown.
  4. Spread goat cheese on each toasted baguette slice.
  5. Top with a spoonful of blueberry ginger jam.
  6. Garnish with fresh mint leaves.
