  • 1 cup Blueberries
  • 1 can Black beans
  • 1 cup Breadcrumbs
  • 1 small Red onion
  • 2 clove Garlic
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 4 piece Burger buns
  • 4 leaf Lettuce
  • 4 slice Tomato
  • 4 tablespoon Mayonnaise
Instructions
  1. In a food processor, combine blueberries, black beans, breadcrumbs, red onion, garlic, parsley, salt, and black pepper. Pulse until well combined.
  2. Form the mixture into patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, until golden brown.
  4. Toast the burger buns.
  5. Assemble the burgers by placing a patty on the bottom bun, followed by lettuce, tomato, and mayonnaise. Top with the remaining bun.
  6. Serve and enjoy!
