Ingredients
  • 2 cup Blueberries
  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar
  • 0.75 cup Unsalted butter
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Lemon zest
  • 0.5 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine the flour, granulated sugar, baking powder, salt, and lemon zest.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the egg and vanilla extract. Add to the flour mixture and mix until well combined.
  5. Press half of the mixture into the prepared baking dish.
  6. Spread the blueberries evenly over the crust.
  7. Crumble the remaining flour mixture over the blueberries.
  8. Bake for 40 minutes or until golden brown.
  9. Allow to cool completely before cutting into bars.
  10. Dust with powdered sugar before serving.
