  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup halfway with batter.
  6. Spoon 1 tablespoon of blackberry jam onto the center of each muffin cup.
  7. Top with the remaining batter to cover the jam.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the muffins comes out clean.
  9. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
