Ingredients
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 cup Cheddar cheese, shredded
  • 1 cup Green onions, chopped
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 piece Egg, beaten
  • 1 cup Milk
  • as needed for frying Vegetable oil
Instructions
  1. In a large bowl, combine black beans, corn kernels, cheddar cheese, green onions, all-purpose flour, baking powder, and salt.
  2. In a separate bowl, whisk together the beaten egg and milk.
  3. Pour the egg and milk mixture into the bowl with the bean mixture. Stir until well combined.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Drop spoonfuls of the fritter batter into the hot oil and flatten slightly with the back of a spoon.
  6. Cook for 2-3 minutes on each side, or until golden brown.
  7. Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
  8. Serve hot and enjoy!
