  1. In a large bowl, crush the Biscoff cookies into fine crumbs.
  2. Add cream cheese, powdered sugar, and vanilla extract to the bowl. Mix until well combined.
  3. Shape the mixture into small balls and place them on a lined baking sheet. Freeze for 30 minutes.
  4. In the meantime, melt the Biscoff spread, semi-sweet chocolate chips, and shortening in a microwave-safe bowl.
  5. Take the frozen balls out of the freezer and dip each one into the melted mixture, using a toothpick.
  6. Place the dipped balls back on the baking sheet and chill in the fridge for at least 30 minutes.
