  1. Preheat the oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 8-10 minutes. Let them cool, then chop coarsely.
  2. In a saucepan, melt butter over medium heat. Add sugar and salt, stirring until the sugar dissolves. Stir in the heavy cream and milk. Heat until the mixture is hot, but not boiling.
  3. In a separate bowl, whisk the egg yolks. Gradually pour the hot cream mixture into the bowl, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  4. Remove from heat and stir in the vanilla extract. Let the mixture cool completely.
  5. Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions. During the last few minutes of churning, add the chopped pecans.
  6. Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.
  7. Serve and enjoy!
