Ingredients
  • 1 medium Onion
  • 3 clove Garlic
  • 1 inch Ginger
  • 2 tablespoon Vegetable oil
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 2 medium Tomatoes
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 medium Bell pepper
  • 1 cup Coconut milk
  • 1 cup Water
  • 2 tablespoon Fresh cilantro
  • 2 cup Cooked rice
Instructions
  1. Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  2. Add curry powder, turmeric powder, cumin powder, coriander powder, cayenne pepper, and salt. Stir well to coat the onion mixture with the spices.
  3. Add chopped tomatoes and cook until they are soft and mushy.
  4. Add diced potatoes, sliced carrots, and chopped bell pepper. Stir well to combine.
  5. Pour in coconut milk and water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until the vegetables are cooked through.
  6. Serve the curry over cooked rice and garnish with fresh cilantro.
