  • 3 unit Ripe Bananas
  • 1.5 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 0.5 cup Unsalted Butter
  • 0.75 cup Granulated Sugar
  • 2 unit Eggs
  • 1 teaspoon Vanilla Extract
  • 0.5 cup Chopped Walnuts
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Lemon Zest
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  4. In another bowl, cream together the unsalted butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients until well combined.
  6. Fold in the mashed bananas, chopped walnuts, lemon juice, and lemon zest.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  10. Once cooled, slice the banana nut bread and serve with your favorite jam.
