  • 1.5 cup Ripe bananas
  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.5 cup Granulated sugar
  • 2 unit Eggs
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mash the ripe bananas.
  3. In a separate bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt.
  4. In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the milk. Stir in the vanilla extract.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
