Ingredients
  • 1.5 cup Ripe bananas
  • 1.5 cup All-purpose flour
  • 0.5 cup Shredded coconut
  • 0.75 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 unit Eggs
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.25 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mash the ripe bananas.
  3. Add the eggs, vegetable oil, brown sugar, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together the all-purpose flour, shredded coconut, baking powder, ground cinnamon, ground nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
