Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.

In a large bowl, combine the shredded coconut, flour, cocoa powder, sugar, and salt.

In a separate bowl, whisk the egg whites and vanilla extract until frothy.

Pour the egg white mixture into the dry ingredients and mix until well combined.

Fold in the chocolate chunks.

Using a cookie scoop or tablespoon, drop rounded mounds of the mixture onto the prepared baking sheet.

Bake for 12-15 minutes, or until the macaroons are set and slightly golden.

Remove from the oven and let cool on the baking sheet for 5 minutes.
