Ingredients
  • 800 gram Sweet potatoes
  • 200 gram Avocado
  • 100 gram Goat cheese
  • 100 gram Sour cream
  • 2 teaspoon Lemon juice
  • 15 gram Fresh cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Rub the sweet potatoes with olive oil and sprinkle with salt.
  4. Place the sweet potatoes on a baking sheet and bake for 45 minutes, or until tender.
  5. While the sweet potatoes are baking, prepare the avocado and goat cheese cream.
  6. In a bowl, mash the avocado and goat cheese together until smooth.
  7. Add sour cream, lemon juice, chopped cilantro, salt, and black pepper. Mix well.
  8. Once the sweet potatoes are done, remove them from the oven and let them rest for 5 minutes.
  9. Cut each sweet potato in half lengthwise and top with the avocado and goat cheese cream.
  10. Garnish with additional cilantro if desired.
  11. Serve hot and enjoy!
