Ingredients
  • 2 medium-sized Avocado
  • 1 pack Egg Roll Wrappers
  • 1 small Red Onion
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Vegetable Oil
Instructions
  1. In a bowl, mash the avocados until smooth.
  2. Add the red onion, cilantro, lime juice, salt, and pepper to the mashed avocados. Mix well.
  3. Place a spoonful of the avocado mixture onto an egg roll wrapper. Fold the sides of the wrapper towards the center, then roll it up tightly. Use water to seal the edges.
  4. Heat vegetable oil in a pan over medium heat. Fry the egg rolls until golden brown.
  5. Remove from the pan and drain on paper towels. Serve hot with your favorite dipping sauce.
