  1. In a large bowl, mix the all-purpose flour, semolina, instant yeast, sugar, and baking powder.
  2. Gradually add the milk, water, rose water, and orange blossom water to the dry ingredients. Mix well until you have a smooth batter.
  3. Cover the bowl with a kitchen towel and let the batter rest for 10 minutes.
  4. In a separate bowl, combine the chopped walnuts, sugar, ground cinnamon, and ground cardamom for the filling.
  5. Heat a non-stick frying pan over medium heat. Pour a small ladleful of the batter onto the pan to form a small pancake.
  6. Cook the pancake until bubbles form on the surface, then flip it over and cook for another minute.
  7. Remove the pancake from the pan and place it on a plate. Spoon a small amount of the walnut filling onto one half of the pancake, then fold it in half to form a half-moon shape.
  8. Repeat steps 5-7 with the remaining batter and filling.
  9. Garnish the filled pancakes with crushed pistachios and drizzle with honey.
  10. Serve the Ataif pancakes warm and enjoy!
