Ingredients
  • 300 gram Asparagus
  • 200 gram Leek
  • 4 cup Vegetable broth
  • 150 gram Potato
  • 2 teaspoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 0.5 cup Heavy cream
  • 2 tablespoon Chives
Instructions
  1. Heat olive oil in a large pot over medium heat. Add garlic and leek, and sauté until soft.
  2. Add asparagus and potato, and cook for 5 minutes.
  3. Pour in vegetable broth, season with salt and pepper, and bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream and cook for an additional 5 minutes.
  7. Serve hot, garnished with chopped chives.
