  • 500 gram Eggplant
  • 100 gram Breadcrumbs
  • 2 unit Eggs
  • 50 gram Flour
  • 4 teaspoon Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 clove Garlic
  • 20 gram Parsley
  • 1 teaspoon Oregano
  • 2 teaspoon Red wine vinegar
  • 100 gram Mayonnaise
Instructions
  1. Slice the eggplant into 1/2-inch thick rounds. Sprinkle salt on both sides and let it sit for 10 minutes to remove excess moisture.
  2. In a shallow dish, beat the eggs. In another dish, mix the breadcrumbs, flour, salt, and pepper.
  3. Dip each eggplant slice into the beaten eggs, then coat it with the breadcrumb mixture.
  4. Heat vegetable oil in a large skillet over medium heat. Fry the breaded eggplant slices until golden brown on both sides.
  5. In a blender, combine garlic, parsley, oregano, red wine vinegar, and mayonnaise. Blend until smooth to make the chimichurri mayonnaise.
  6. Serve the fried eggplant milanesas with chimichurri mayonnaise on the side.
