  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved. Remove from heat and let cool.
  3. In a large bowl, beat the eggs and vanilla extract. Gradually add the cooled butter mixture and mix well.
  4. In a separate bowl, combine the flour, oats, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour half of the batter into the prepared cake pan. Arrange the apricot slices on top of the batter. Pour the remaining batter over the apricots.
  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once the cake is cooled, dust with powdered sugar before serving.
