Ingredients
  • 1.5 cup Apricots
  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar
  • 0.75 cup Unsalted butter
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 0.25 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
  2. In a medium bowl, combine the all-purpose flour, granulated sugar, salt, and baking powder. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg and vanilla extract together. Add the egg mixture to the dry ingredients and mix until well combined.
  4. Press two-thirds of the dough into the prepared baking dish. Spread the apricot preserves evenly over the dough.
  5. Crumble the remaining dough over the apricot layer.
  6. Bake for 30 minutes, or until the top is golden brown. Allow to cool completely in the baking dish.
  7. Once cooled, dust with powdered sugar and cut into bars. Serve and enjoy!
