Ingredients
  • 1 1/4 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 cup Unsalted Butter
  • 1 cup Cheddar Cheese, grated
  • 4 tablespoon Ice Water
  • 6 medium Apples (peeled, cored, and sliced)
  • 1 tablespoon Lemon Juice
  • 3/4 cup Granulated Sugar
  • 2 tablespoon All-Purpose Flour
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 2 tablespoon Unsalted Butter, cut into cubes
  • 1 large Egg (beaten with 1 tablespoon water)
Instructions
  1. In a food processor, combine flour and salt. Add chilled butter and pulse until the mixture resembles coarse crumbs. Add grated cheddar cheese and pulse a few more times. Gradually add ice water and pulse until the dough comes together.
  2. Divide the dough in half, shape each half into a disk, and wrap in plastic wrap. Refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). In a large bowl, toss the apples with lemon juice. In a separate bowl, mix together sugar, flour, cinnamon, and nutmeg. Add the sugar mixture to the apples and toss until well coated.
  4. Roll out one disk of dough on a lightly floured surface. Place it in a 9-inch pie dish, trimming any excess. Fill the pie shell with the apple mixture and dot with cubed butter.
  5. Roll out the remaining dough and place it over the apples. Trim any excess and seal the edges by crimping with a fork. Cut a few slits on the top crust to allow steam to escape. Brush the crust with the beaten egg.
  6. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling. Allow the pie to cool for at least 30 minutes before serving.
