  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the diced apples and chopped walnuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
