Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Granulated sugar
  • 1/2 cup Milk
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 2 Apples (peeled and diced)
  • 1 tablespoon Lemon juice
  • Powdered sugar (for dusting)
Instructions
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs and granulated sugar until creamy. Then add the milk, vegetable oil, vanilla extract, lemon zest, and lemon juice. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the diced apples.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, dust the muffins with powdered sugar before serving.
