  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry sheets on a lightly floured surface.
  3. In a bowl, mix together the sliced apples, cranberries, brown sugar, cinnamon, and lemon juice.
  4. Spread the apple-cranberry mixture evenly over one of the puff pastry sheets, leaving a small border around the edges.
  5. Place the second puff pastry sheet on top and press the edges together to seal.
  6. Brush the top of the pastry with beaten egg.
  7. Cut slits in the top of the pastry to allow steam to escape.
  8. Bake for 25-30 minutes, or until the pastry is golden brown and crispy.
  9. Allow the strudel to cool for 10 minutes before slicing into individual portions.
