  • 2 medium Apples
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Oats
  • 0.5 cup Raisins
  • 0.5 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Peel and core the apples, then chop them into small pieces.
  3. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped apples, oats, raisins, and chopped walnuts.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
