Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 1 cup Granulated sugar
  • 1/2 cup Vegetable oil
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 2 medium Apples
  • 2 tablespoon Brown sugar
  • 2 tablespoon Butter
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs and granulated sugar until light and fluffy. Stir in the vegetable oil, milk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Peel and chop the apples into small pieces. In a small bowl, mix the chopped apples with brown sugar and cinnamon.
  6. Fold the apple mixture into the muffin batter.
  7. Divide the batter evenly among the muffin cups.
  8. In a small bowl, mix together the brown sugar and butter until crumbly. Sprinkle the mixture over the muffin batter.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
