Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.

In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.

In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Gradually add flour and sour cream, mixing until well combined.

Pour the cream cheese mixture into the crust. Smooth the top with a spatula.

In a small bowl, combine sliced apples, cinnamon, brown sugar, and lemon juice. Arrange the apple mixture over the cream cheese layer.

Bake for 60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cheesecake cool completely.

Refrigerate for at least 2 hours before serving.
